For Stacy and Patrick Jambé, that story begins long before their first booth, their first customer, or even their first official batch of Liège waffles. It begins with a dream they carried quietly, patiently, and passionately for years — a dream to share the sweet flavors of Belgium with the community they love.
A Family Dream, Years in the Making
Long before Jambé Family Belgian Delights became a name, it was an idea passed between late-night conversations, family gatherings, and hopeful “one day…” moments. Stacy and Patrick had always imagined building something of their own — something joyful, something delicious, something that brought people together.
Liège waffles were special to them from the start. Their caramelized pearl sugar crunch, buttery richness, and warm, comforting aroma felt like the perfect way to spread happiness. Friends, family, and members of their local theater life often told them, “You should really start a business!” And every time the Jambés served waffles at shows or gatherings, those voices only grew louder.
Still, life has a way of keeping dreams waiting. Jobs, responsibilities, and the everyday noise of adulthood delayed the leap — but never dimmed the spark.
Taking the Leap Into 2025
This year, the Jambés decided it was time. Time to turn “maybe someday” into “here we are.” In early 2025, after months of planning, testing, tasting, and shaping their vision into reality, Jambé Family Belgian Delights officially launched.
The goal was simple:
Bring joy, comfort, and a touch of Belgian sweetness to Central Florida — one Liège waffle at a time.
With the support of loved ones, a growing community, and a whole lot of heart, Stacy and Patrick opened their calendar to local festivals, markets, and events. From the bustling Mount Dora Blueberry Festival to charming garden fairs and beyond, the Jambés set out to share their waffles with as many people as possible.
